Spring Novelties arrive at the restaurant of The Vintage Lisboa
At the restaurant of The Vintage Lisboa, of the NAU Hotels & Resorts Group, Spring arrives with double the novelties. The restaurant inaugurates the new menu to celebrate the Spring Equinox, the first prepared by Chef Vera Silva, who has recently replaced Chef Vitor Cardoso in commanding the kitchen of The Vintage Restaurant & Bar.
In his first menu as leader of the team of The Vintage Restaurant & Bar, Chef Vera Silva brings in a fresh view on traditions, on a journey through the Portuguese Sea, the colours, textures and flavours of our land and the temptations of our national confectionery.
Her proposals show a clear preference given to products of national origin and a respect for their essence and freshness in their preparation. Among some of the most genuine ingredients made in Portugal we find, for example, Massuça goat cheese, whose unique flavour stands out in the Salad of smoked ham, Massuça goat cheese and strawberry in balsamic reduction, or the biological vegetables of Quinta do Paial, being prominent in various fish and meat dishes such as Turbot and Pork Belly.
Easy to read, the Spring menu is organised into five main categories. ‘As a Starter` features the four suggested starters of this menu. This is followed by four recommendations from the sea in ‘The fish through its mouth dies’ and another four from the land in ‘Meat today makes a healthy man’. For the main dish there are also two vegetarian alternatives in ‘We love pasta and risotto’, and to finish, because ‘thrice was the sum made by God’, three sweets are offered in the Dessert “That is neither bitter, nor sour, nor salty”.
Harmony, freshness and succulent flavours are the essential blueprints guiding the preparation and cooking of all the dishes of the new menu of The Vintage Restaurant & Bar, which innovates in combinations and presentations but which, even so, remains faithful to the principles of Traditional Portuguese Cuisine that characterise the gastronomy offered by this restaurant located in the very heart of Lisbon.
